Lukas has teamed up with a Boston-based potter Jeremy Ogusky, who has crafted specific ceramic serving pieces for the dinner.
Lukas has spent an immense amount of time researching and experimenting with fermentation, and this dinner is a chance for you to taste his diverse fermented successes.
The dishes use different techniques from different cultures, and even different periods of time, including the following:
-Keshk-glazed sweet peppers and fennel
-Lacto carrots with crispy pinenuts and green chickpeas
-Mackerel escabeche with celery kimchi
-Chocolate, wood-grilled cocoa nibs, caramelized whey
In addition to exciting food, the dinner will be paired with fermented drinks such as a beet kvass aperitifand locally made hard cider from Bantam Cider and Night Shift beer.

Both Lukas and Ogusky are passionated fermenters.
Lukas uses fermentation techniques in his food while Ogusky makes handcrafted fermentation crocks that make in-home lacto-fermentation easy.
