Set aside the evening of June 16 for a 5-course fermented pre-fixe dinner created by Geoff Lukas, chef de cuisine at Sofra Bakery!

Lukas has teamed up with a Boston-based potter Jeremy Ogusky, who has crafted specific ceramic serving pieces for the dinner.

Lukas has spent an immense amount of time researching and experimenting with fermentation, and this dinner is a chance for you to taste his diverse fermented successes.

The dishes use different techniques from different cultures, and even different periods of time, including the following:

-Keshk-glazed sweet peppers and fennel
-Lacto carrots with crispy pinenuts and green chickpeas
-Mackerel escabeche with celery kimchi
-Chocolate, wood-grilled cocoa nibs, caramelized whey

In addition to exciting food, the dinner will be paired with fermented drinks such as a beet kvass aperitifand locally made hard cider from Bantam Cider and Night Shift beer.

And below are our top 5 reasons why you don’t want to miss this event:

1.

Both Lukas and Ogusky are passionated fermenters.

Lukas uses fermentation techniques in his food while Ogusky makes handcrafted fermentation crocks that make in-home lacto-fermentation easy.

So they really know what they are doing.
2.

These fermented dishes will be your culinary passport to different parts of the world, from Asia to Europe, the Middle East and the Mediterranean.

3.

Have you had double-fermented food?

If not, this dinner will be your chance to try it!
4.

After the dinner, you will bring home a 6-oz ceramic cup made by Ogusky.

You will get to choose the cup you like before the dinner starts and we will fill it with beet kvass as an aperitif.
5.

Fermentation makes the food tasty and flavorful and every dish served that night will confirm this statement.
